Meatless Sloppy Joe’s

Ingredients (per serving)

Preparation

In blender or food processor, pulse half of the bean soup until creamy; add to other half that has been strained; put liquid aside. Mix tomato paste with bean mixture, add chili powder and cook until hot. Pour mixture on bread, garnish with shredded or Parmesan cheese. May be accompanied with a cup of the previously strained broth. (The green on top of bread in photo is extra kale that I just put on top.)

*Garden beans soup (prepared ahead of time): in a large pot cook new beans, quartered onion, garlic, salt, pepper, new potatoes, and any other vegetable of choice. You may also use broth instead of water. Cook until potatoes are tender.

Notes: For the soup, we used vegetables from our garden and broth saved from previously cooked kale. This soup had already been consumed days before as a meal in itself. Leftovers had been frozen and thawed to prepare meal. The cheese, tomato paste, and bread were already on hand. Total cost for meal: $0.
